Wheat germ is the inner part of the wheat kernel, minus the outer bran. As a concentrated source of minerals, vitamins and protein, wheat germ is very good for the body. However, because it contains oil, it can become rancid and spoil easily.

Storage

    Wheat germ is sold raw and toasted, and you also can buy wheat germ oil. Once opened, store these products in a sealed container in the refrigerator, as heat, light and oxygen hasten rancidity. Keep no longer than three months, says "Better Homes & Gardens."

Identification

    Use your nose to help you identify spoilage. The aroma and flavor of rancidness can be described as acrid-sharp, bitter and stinging.

Consumption

    Never eat spoiled wheat germ because it can make you very ill. Also, rancid foods destroy the body's own supply of vitamins B and E, two of the key nutrients wheat germ supplies your body with when fresh, says "The New York Times."
